I was moving to Changzhou and China, and I thought I would not see my favorite food again for a long time. It was sad. It felt like I was losing my best friend, and I needed to spend as much time with them as possible before tearful farewell. I thought I would only have access to Chinese cuisine at my new home. That was just one of my many foolish misconceptions back then. After I rode the B11 for the first time, I became really excited by the amount pizza joints the bus whizzed past. Eventually, I tried some of those places, and I masked my disappointment by saying this: at least pizza was not fully out of my new life. And let’s be honest; most Americans are disgusted by the thought of a salty anchovy-covered pizza. Plus, the sauce was too sweet. For these reasons, I always rejoice when I find an eatery that largely gets pizza right. It’s a small, cozy place with only a few tables, red brick walls in some areas, and lots of décor. In many respects, eating there feels like dining at one of the very small Italian nooks easily found in New Jersey, Philadelphia, or New York City. By that, I mean the food has striking similarities. Not all pizza is the same in America. Want to be berated by angry Italian Americans? Go into a pizza shop in Philly and ask if they serve Chicago deep dish. Asking for “California style” will elicit an even angrier reaction filled with unmentionable f-bomb expletives and wild gesticulations involving middle fingers. Many people in the greater vicinity of Philly or New York City are intense pizza snobs, as am I. Tree’s pies feature a thin, crispy crust. There is a healthy amount of sauce, and for the most part, a large number of the pizzas feature traditional ingredients. The same could be said for their ham-and-cheese calzone with a side plate of sauce. This is also true of their garlic bread. Sure, durian is on their menu, but that’s to be expected. Monkey King has great food because it has a talented Italian chef as its creative force. Pizzeria da Morfeo used to have an Italian before it got sold. Aria also had one before it went out of business. Tree’s owner is Chinese, and he didn’t travel to the United States or Italy to learn the art of pizza. He taught himself by trial and error. He also did a lot of “research” by eating in Shanghai and then trying to figure out how to imitate what he loved most. When I asked the owner what prompted him, the answer was more of indication of how much Changzhou has grown over five years. “This city didn’t have a lot of foreign food back then, and I got so tired of eating rice.” So, he decided to do something constructive and open a restaurant. He went out and learned how to cook western food. When I asked him why he focused on pizza, the answer was beautifully simple. “I really love pizza.” His customers can easily taste that love in his work. [/cs_text][/cs_column][cs_column fade=”false” fade_animation=”in” fade_animation_offset=”45px” fade_duration=”750″ type=”1/2″ style=”padding: 0px;”][cs_text class=”cs-ta-justify”]接下来要说的关于店主的事,更让人费解。像猴王披萨的食物非常棒,因为它有一位出色的意大利主厨,释非披萨店在转让前也有来自意大利的主厨,Aria披萨店同样有着意大利主厨,但后来却经营不当停业;而树披萨的主厨是中国人,他并没有到美国或意大利学习做披萨的经历,他只能在一次次的失败中摸索。他有时也会到上海做很多功课,尝试不同店的不同披萨,试图做出自己最中意的味道。我问店主是什么原因使他这么执着,他回答我说:“原因在于常州在这五年中发生了巨大的变化,那时外国食物在常州还不是很常见,而喜欢吃西餐的我很难找到一家适合自己的餐馆。”于是他决定自己开一家餐馆,他专门去学习西餐烹饪。他如此专注于披萨的答案也是出乎意料的简单:“我就是喜爱披萨”,我想树披萨的顾客在品尝披萨时可以感受到他的诚意。
